I've seen recipes for similar types of potato dishes called funeral potatoes, potato casseroles, etc. But, I've never tasted one that comes anywhere close to rivaling my Mom's recipe for Hash Brown Potato Casserole, also known in our family as "Matthew's Potatoes".

The name is in reference to my cousin Matt's love for this dish since he was a little kid. Because he requested them so much for family gatherings our parents just started calling them Matthew's Potatoes. To be honest, I had no idea what to call this recipe because I have only ever known it by it's nickname!

This recipe is so quick to make and you can easily cut it in half for a small crowd or double it for a party or pot luck. It is also perfect to make ahead of time and just pop it in the oven when you are ready to bake it.  But, make sure you give it plenty of time to bake as it takes about 90 minutes.

I will warn you that these potatoes are so tasty you will have a hard time stopping at one serving!  Below is the recipe and step by step directions with pictures. There is a printable recipe at the end of the post. Enjoy!

Ingredients:

  • Casserole:
    • 2lb bag frozen hash brown
    • 1 can cream of chicken soup
    • 8 ounces shredded cheddar
    • 1/2 cup chopped onion
    • 1 stick butter, melted
    • 1 pint sour cream
  • Topping:
    • 2 cups corn flakes
    • 1/4 cup butter, melted

Making Hash Brown Potato Casserole:

First, combine casserole ingredients...

In a medium or large mixing bowl combine hash brown potatoes, soup, cheese, onion, butter and sour cream.

Second, put potato mixture in greased 13x9 baking dish...

Next, top with corn flakes...

Combine cornflakes and 1/4 cup of melted butter and spread over top of the potato mixture.

Finally, bake at 350 degrees for 90 minutes...

Cover with foil for baking. I like to remove the foil for the last about 10-20 minutes to get the cornflakes extra crunchy.

Allow to cool and enjoy!

Casserole

  • 2 lb bag frozen hash browns
  • 1 can cream of chicken soup
  • 8 ounces shredded cheddar cheese
  • 1/2 cup chopped onion
  • 1 stick butter (melted)
  • 1 pint sour cream

Topping

  • 2 cups corn flakes
  • 1/4 cup melted butter
  1. Mix together all casserole ingredients.
  2. Put potato mixture into greased 13x9 casserole dish.
  3. Top with 2 cups corn flakes and 1/4 cup melted butter.
  4. Cover and bake at 350 degrees for 1-1/2 hours.
