Chicken Divan

A creamy and delicious casserole with chicken, broccoli, and a curry sauce. Chicken Divan is an easy dish to make for family dinner or for a crowd. #chicken #casserole #easy #curry #broccoli

Chicken Divan was a recipe my family made a lot growing up. I'm not really sure of its origin, but it is a dish we had on a regular basis. It is so easy and delicious, and when doubled can feed a crowd! The sauce in this casserole is so unique; it is creamy and has a kick of curry. Not to mention the topping has the perfect combination of cheese and bread crumbs. My husband absolutely loves the curry flavor in this dish, so if you are a curry fan you will probably feel the same!

An added bonus is that Chicken Divan is great when you need something to use up some leftover chicken, turkey or broccoli. I think there have been a lot of occasions we have had this casserole made with leftover Thanksgiving turkey. Now that I've talked about this recipe so much I'm really craving it; I better get the ingredients to make it this week!

Check out my step by step directions with pictures below, and printable recipe at the bottom. Enjoy!

Ingredients:

  • 2 cups cubed cooked chicken
  • 2 - 10 ounce packages frozen broccoli, or 2 large bunches fresh
  • 2 cans cream of chicken soup
  • 1 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 - 1 teaspoon curry powder (depending on your taste)
  • 1/2 cup grated sharp cheddar cheese
  • 1/2 cup bread crumbs or cubes
  • 1 tbsp melted butter

How to Make Chicken Divan:

Cook the broccoli...

broccoli in a steamer

The casserole does not really bake long enough to thoroughly cook the broccoli. Therefore it needs to be cooked before being added to the dish. I like to steam or boil the broccoli first.

Once cooked, set aside.

Combine soup, mayonnaise, curry, and lemon juice...

Next, layer the chicken on top of the broccoli...

I love having cooked chicken on hand. Usually I cook down a few chicken breasts in the crock pot and divide it up and freeze it. Then I can just pull out what I need.

Then, pour sauce evenly over the broccoli and chicken...

Finally, sprinkle cheese and bread crumbs on top...
