Simple Chicken Pot Pie

Chicken Pot Pie is just one of those great comfort food dishes. It's so creamy, with chicken and soft vegetables and a yummy flaky crust. While the traditional versions are great, I'm a busy mom and having a recipe for an easier version is perfect for me.

My mom used to make this simple chicken pot pie casserole when I was younger, and now I have been making it for my family. Pretty much it is a casserole with the traditional style chicken pot pie filling in the bottom then topped with canned biscuits. Taking out the work of making the crust really can save some time. Plus I just love the way the biscuits taste with this dish.

Probably the most difficult part of making this casserole is making the creamy sauce. You have to give a little time and effort to adding the ingredients and then keep stirring over heat until the sauce thickens. If you are not careful you could burn the milk which would ruin the sauce. So make sure you have the time and can give full attention to that step.

Ingredients:

  • 1/4 cup margarine or butter
  • 1/3 cup flour
  • Dash Pepper
  • 1 - 10 ounce can condensed chicken broth
  • 3/4 cup milk
  • 2 cups cubed cooked chicken
  • 1/3 cup chopped onion
  • Package frozen mixed vegetables or 2 cans mixed vegetables, drained
  • 1 can (8) biscuits

Directions:

Melt margarine or butter in deep skillet...

Stir in flour and pepper...

Cook 1 minute; stirring until smooth and bubbly.

Gradually stir in broth and milk...

Stir constantly until mixture boils and thickens.

Add chicken, onion, and vegetables...

Chicken hint- I cook chicken in my crock pot and shred it on a regular basis. Then I just divide it and freeze it. I pull out a bag and thaw it when I need it and throw it right into the casserole!

Once you add chicken and vegetables heat until it bubbles.

Pour into greased casserole dish...

Flatten biscuits and place on top...

Bake at 350 until brown and bubbling...

  • 10 ounce can chicken broth
  • 3/4 cup milk
  • 2 cups cubed, cooked chicken
  • 1/3 cup chopped onion
  • 1 package frozen mixed veggies
  • 1 can biscuits
  1. Preheat oven to 350 degrees.

  2. Melt margarine/butter in deep skillet.

  3. Stir in flour and pepper.

  4. Cook 1 minute, stirring until smooth and bubbly.

  5. Gradually stir in broth and milk.

  6. Stir constantly until mixture boils and thickens.

  7. Add chicken, onion, and vegetables.

  8. Heat until bubbles.

  9. Pour into greased casserole.

  10. Flatten biscuits and place on top.

  11. Bake until brown and bubbling.
