Peanut Butter Chocolate Chip Cookies
As I shared on my Banana Bread recipe, one of my favorite ways to deal with stress is to spend time in the kitchen baking. Since I have to stay home this is the perfect time to try out some new recipes! This Peanut Butter Chocolate Chip Cookie recipe is one that I came across in my collection of recipes from my mother in law. And let me tell you, I will be making these a lot more!
I have no idea where she got this cookie recipe from, but it is so easy! I actually had everything I needed for them in my pantry, which is perfect during a time like this when grocery stores may not have stock. The original recipe did call for shortening in the cookies, which I did not have. I used butter instead, which is why these cookies turned out so delicious!
Below I've detailed the easy steps I took to prepare these cookies and the printable recipe is at the bottom. Enjoy!
Making Peanut Butter Chocolate Chip Cookies...
Combine peanut butter, butter, sugars, egg and vanilla...
Beat peanut butter, butter, sugar, brown sugar, egg and vanilla extract until smooth. Note- I really love that this recipe only calls for one egg!
Stir together flour, baking soda, salt...
Combine dry ingredients in a separate medium bowl. I use a whisk to easily combine the flour with the baking soda and salt.
Add dry ingredients to butter mixture...
Add a about 1/3 of the flour mixture into the peanut butter batter at a time. Only mix until combined. Add the chocolate chips and gently mix them into the dough.
Bake at 375 degrees for 10-12 minutes...
Drop batter about 2 inches apart. I highly recommend using a cookie dough scoop for this!
Bake cookies for about 10-12 minutes or golden brown on the edges. Allow the cookies to stand on the tray for 2-4 minutes before moving to a cooling rack. The cookies are really fragile when hot and will crack if you move them too soon.

Peanut Butter Chocolate Chip Cookies

- 1/2 cup crunchy peanut butter
- 3/4 cup softened butter
- 1/2 cup brown sugar (firmly packed)
- 1/2 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup chocolate chips

Preheat oven to 375 degrees.

Beat peanut butter, butter, brown sugar, sugar, egg and vanilla together until smooth.

Stir together flour, baking soda and salt in medium bowl.

Add flour mixture into peanut butter mixture about 1/3 at a time. Blend until combined.

Fold in chocolate chips.

Drop batter 2 inches apart.

Bake 10-12 minutes.

Let stand 2 or more minutes before removing from baking pan.
