Things in the world are crazy right now with the Coronavirus outbreak. Most people are practicing some level of social distancing or quarantining at this point. This is a tough time, but I try really hard in my life to be an optimist and I know that things will get better eventually. Although I cannot control when things will get better I know I can do my part by staying home, which is exactly what I am doing. One of my favorite ways to take my mind off things while I am home is by baking, and a staple I've been making in our house lately has been Banana Bread.

For some reason the last couple of bunches of bananas I have purchased have turned brown really fast, and that is not how I like them at all. I definitely do not want to waste them, and the perfect thing to make with really ripe bananas is Banana Bread!

This recipe is a combination of one that was passed down to me from my mom and another one I tried recently. The big change from my mom's recipe is that I used more bananas and added cinnamon. These two additions make it really moist and extra delicious! Side note- your house is going to smell amazing while this is baking!

Banana Bread Baking Tips...

Use really ripe bananas...

Ripe bananas

I definitely recommend using really ripe (brown) bananas. They are so easy to mash and will give so much more flavor to the bread. Use anywhere from 2-4 bananas. I've baked a lot of banana bread with 2 bananas, but upping my amount to 4 made the bread really moist and extra tasty! But, use whatever you have and it will still be great!

Make sure the bread is done in the middle...

Banana bread can be deceiving while baking. It may look done on the outside, but the inside could still be raw batter. When time is close to being up, stick a skewer or knife into the center of the loaf then carefully pull it back out. If it does not come out clean let the bread bake longer. Continue to check it every 5-10 minutes. As soon as the knife comes out clean take it out of the oven.

Allow it to cool in the pan...

Let your banana bread cool in the pan for a little while. If you try to flip it out of the pan onto a cooling rack while it is still really hot you risk it breaking apart. Once it is cool enough to touch the pan, then you can flip it out onto a cooling rack on the counter.

Banana Bread

An easy and delicious banana bread recipe!

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 2-4 mashed bananas
  1. Combine flour, baking powder, baking soda, cinnamon and salt in medium bowl.

  2. In separate mixing bowl cream together vegetable oil and sugar.

  3. Add eggs to sugar mixture one at a time. Then add bananas. Mix well.

  4. Blend dry ingredients into banana mixture a little at a time.

  5. Pour batter into greased 9x5 loaf pan.

  6. Bake at 350 degrees for 60-70 minutes.
