Easy Pumpkin Spice Snickerdoodle Cookies

It's fall and time for all things Pumpkin Spice. While I am not a fan of Pumpkin Spice Lattes, I do enjoy some pumpkin baked goods and desserts. I was making snickerdoodles for my kids recently and I realized that they would probably taste great rolled in pumpkin spice seasoning instead of just cinnamon and decided to give it a try. They turned out great with the perfect subtle taste of pumpkin spice!

This snickerdoodle recipe is so easy and the cookies are soft and chewy. Rolled in the delicious pumpkin spice seasoning combined with sugar brings them to the next level. They are so good that I just had to share the recipe!

How to Make Pumpkin Spice Snickerdoodle Cookies...

Combine butter, sugar, vanilla and eggs...

Thoroughly mix softened butter, 1-1/2 cups sugar, 1 teaspoon vanilla extract and eggs in a large mixing bowl.

In a separate bowl combine flour, cream of tartar, baking soda and salt...

Using a medium bowl combine the dry ingredients. Use a whisk to help stir them together.

Blend dry ingredients into butter mixture...

Add dry ingredients to butter mixture about 1/3 at a time. Be sure to mix well after each addition.

Chill dough for at least 10-15 minutes...

I like to wrap up the dough in wax paper before putting it in the refrigerator. You can refrigerate it for just 10-15 minutes or even overnight.

Mix together sugar and pumpkin spice seasoning...

Combine 3 tablespoons of sugar and 3 teaspoons pumpkin spice seasoning in a small bowl.

Make 1 inch balls of dough and roll in sugar mixture...

When ready to bake the cookies take the dough out of the refrigerator and roll dough into about 1 inch balls. Roll dough balls in sugar mixture making sure the dough balls are evenly coated.

Bake for 10 minutes...

Bake cookies on ungreased cookie sheet for 10 minutes at 350 degrees. Remove from pan immediately after baking.

Pumpkin Spice Snickerdoodles

Soft and Chewy Snickerdoodles that are instantly upgraded with the addition of delicious pumpkin spice seasoning.

Cookie Dough

  • 1 cup butter ((softened))

  • 1-1/2 cups sugar

  • 2 eggs

  • 2-3/4 cups flour

  • 2 tsp cream of tartar

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp vanilla extract

Sugar and Spice Coating

  • 3 tbsp sugar

  • 3 tsp pumpkin spice seasoning

  1. Mix butter, sugar, vanilla and eggs in a large bowl.

  2. Combine flour, cream of tartar, baking soda and salt in a medium bowl.

  3. Gradually blend dry ingredients into butter mixture.

  4. Chill cookie dough in refrigerator for minimum of 10-15 minutes.

  5. Preheat oven to 350 degrees.

  6. Mix 3 tablespoons sugar and 3 teaspoons pumpkin spice in small bowl.

  7. Roll dough into 1 inch balls.

  8. Place dough balls into sugar/pumpkin spice mixture and roll until well coated.

  9. Bake cookies for 10 minutes.

  10. Remove baked cookies right away from pan.
