Mini Banana Chocolate Chip Muffins
My son just loves those mini muffins you can buy at the grocery store. Don't get me wrong, they are great for a quick grab and go breakfast or snack! But, when we ran out the other day and he asked me for more all I could think was that I could probably make some mini banana chocolate chip muffins at home that he would enjoy just as much. Even better I would know exactly what was in them and how they were made!
So, I decided to just tweak my banana bread recipe slightly and make it into muffins instead. It worked perfectly, and they came out really delicious! Once they cooled my son and I divided them up and packaged them into little plastic bags so that he and my husband can both just grab a pack when they want them.

Ingredients...
- 2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 cup mashed bananas
- 2 eggs
- 1/2 cup chocolate chips
Making Banana Chocolate Chip Muffins...
Combine flour, baking powder, baking soda, and salt...
- Combine in separate bowl and set aside.
Cream together vegetable oil and sugar...
Blend in eggs one at a time...
Mash bananas then add to batter and mix well...
- The riper the bananas the better they are to use for banana muffins or bread!
Blend in dry ingredients...
Add chocolate chips to batter...
Pour batter into greased muffin tin and bake at 350 degrees for about 12-14 minutes...
- I love a mini muffin pan! It makes perfect bite size muffins!
- Bake until golden brown and the tops spring back when touched.
Remove from pan and allow to cool...
Watch out for little muffin thieves! Enjoy!

Perfect bite size banana muffins with chocolate chips! Great for a quick grab and go snack or breakfast!
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 cup mashed bananas
- 2 eggs
- 1/2 cup chopped nuts (optional)
- Combine flour, baking soda, baking powder, and salt in medium bowl. Set aside.
- Cream vegetable oil and sugar together.
- Blend eggs into sugar mixture one at a time.
- Add bananas to batter and mix well.
- Blend in dry ingredients.
- Add chocolate chips.
- Pour batter into greased or lined muffin tins, each about 3/4 full.
- Bake for 12-14 minutes (or until golden brown) at 350 degrees.
