Cantina Style Fresh Salsa

All summer I have been looking forward to the ripe, red tomatoes from my garden.  It seems like all of the sudden we have more tomatoes than I would ever know what to do with!  Our little family cannot consume the 10 or more tomatoes we are harvesting every couple of days from my plants.  So, I decided to give making fresh salsa a try and I am so glad I did!  After researching some recipes I took some ideas from a few different places to make my own recipe.  I created a fresh and delicious salsa in my blender that reminds me of my favorite kind of salsa; Cantina style!

I love the salsa that you can get at Chuy's Tex-Mex (such a good restaurant!) and this reminds me of a milder version.  It is really fresh and smooth with smaller pieces and a little more liquid consistency.  Perfect for scooping up with chips or putting on a taco or quesadilla!

Chop tomatoes into large chunks.  Add to blender.

  • I recommend using Roma tomatoes, as most others have a higher water content and will make for a thinner consistency.

Remove seeds from Jalapeno(s) and chop.  Add to blender.

  • You can use as many jalapenos as you want depending on how much you like their taste.
  • I would suggest taking the seeds and ribs out for a milder salsa, or leave them in for more heat.

Chop red onion until you have about 1 cup.  Add to blender.

Add cilantro leaves to blender.

Squeeze lime juice into blender; add garlic and sea salt.

Pulse blender until you reach the consistency you desire.

  • I only had to pulse the ninja for about 30 seconds before it was the consistency I like.

Pour into an airtight container.  Refrigerate for at least one hour before serving.

  • This allows all of the flavors to mesh together.

Cantina Style Fresh Salsa

Easy and fresh salsa that can be made with ingredients right out of your garden!

  • 6 roma or garden tomatoes
  • 1-3 jalapeno peppers
  • 1 cup red onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tsp sea salt
  • 1 lime
  • cilantro leaves
  1. Chop tomatoes into large chunks.
  2. Remove seeds from Jalapeno peppers and chop into large pieces.
  3. Chop red onion until you have about 1 cup.
  4. Place tomatoes, peppers, and onion in blender.
  5. Add 3 cloves garlic, cilantro leaves, and sea salt.
  6. Squeeze lime juice into blender.
  7. Pulse blender until you reach the consistency you desire.
  8. Put into an airtight container and allow to sit in refrigerator for at least an hour before serving.
