Blueberry growing season has ended in Southwestern Ohio, but there are still tons of great blueberries available at some farm markets and the grocery store. My kids usually eat them so fast that I don't have a chance to make them into Banana Blueberry Muffins, Fruit Pizza or other baked goods. But, this past weekend I bought extra just so I could make one of my husband's favorite summertime desserts: Blueberry Pie!

My recipe for blueberry pie is kind of unique because it is a single crust pie that is not baked (other than the crust). The filling for this pie is amazing and just tastes like summer. It is loaded with blueberries that are never baked so they stay fresh and delicious! It is so easy to make and sets up perfectly after just a few hours of refrigeration. This pie will be a family favorite for sure!

Making Blueberry Pie...

Bake the pie crust...

Press a single pie crust into the pie pan. Flute the edges of the crust. I really like to use Pillsbury Refrigerated Pie Crust when I don't have time to make a crust, it's so easy and tastes great!

When baking a single pie crust using pie weights helps keep the crust flat and from bubbling up. I don't have any pie weights so instead I lined the crust with parchment paper (foil works also) and poured dry rice into it. It worked great, but I think I am going to invest in some of these pie weights soon!

Bake about 5 minutes and then remove the pie weight. Poke a couple of holes in the crust using a fork to keep the bubbles from forming on the crust. Bake for about 5 more minutes or until golden brown. Remove from oven and allow to cool.

Cook filling ingredients until thick...

On the stove top add 1 cup blueberries, water, sugar, cornstarch and lemon juice to a pot. Cook on medium heat, stirring regularly.

Filling is ready when it has cooked down to a nice thick consistency, as pictured above.

Add 1 quart of blueberries...

Remove filling from heat. Add 1 quart of blueberries and stir until evenly mixed.

Let filling stand for 10 minutes.

Pour filling into baked pie shell...

Refrigerate for a few hours before serving...

Blueberry Pie

An easy and amazingly delicious recipe for blueberry pie! With only 6 ingredients and hardly any baking it will be a favorite dessert!

  • 1 Pie Crust ((baked))

  • 1 cup blueberries ((fresh))

  • 3/4 cup water

  • 1 cup sugar

  • 2 tbsp cornstarch ((heaping))

  • 1/2 tsp lemon juice

  • 1 quart blueberries ((fresh))

  1. Bake pie crust (if not already baked).

  2. Prepare filling by cooking 1 cup blueberries, water, sugar, cornstarch and lemon juice on stove until thick.

  3. Remove blueberry filling from heat.

  4. Add quart of blueberries to filling mixture. Mix well.

  5. Allow filling to stand for 10 minutes.

  6. Pour into baked pie crust.

  7. Refrigerate for several hours. Serve cold.
