Banana Blueberry Muffins

The last couple of times we have gotten bananas from the grocery store they have turned brown really fast. While I can always compost them, I also love to bake so I knew I could make them into something! I've made my banana bread recipe quite a few times lately and my son was begging me to make muffins instead. So, I took my mom's banana bread recipe, added blueberries and the end result was delicious Banana Blueberry Muffins!

Making Blueberry Banana Muffins...

Combine dry ingredients...

In a medium bowl combine the flour, baking powder, baking soda, and salt. Set aside.

Blend together remaining ingredients...

Mash ripe bananas in a medium bowl. I like to mash them with a pastry blender or fork.

In a mixing bowl start by creaming together the vegetable oil and sugar.

Then blend in the eggs 1 at a time.

Pour in mashed bananas and mix well.

Add dry ingredients to banana mixture...

Blend the flour mixture into the batter by adding about 1/3 of the dry ingredients at a time. Mix just until combined.

Gently fold the blueberries into the batter...

Carefully hand mix the blueberries into the batter, be sure not to over mix or smash the blueberries in the process.

Pro Tip: Toss blueberries in flour...

I can't remember where I picked up this trick, probably from my mom! But, before adding the blueberries to the batter lightly coat them in some flour. This will help to evenly incorporate them into the batter and keep them from sinking to the bottom. It works great!

Fill lined muffin tin...

Place muffin papers in muffin tin. Fill batter in each to about 2/3 full.

Bake for about 20-25 minutes...

The muffins bake at 350 degrees for about 20-25 minutes. A great way to test if muffins are finished is to lightly tap on the top of the muffin. If it springs right back up it is baked. If pressing on the top leaves an imprint that means the muffins need to bake longer.

Banana Blueberry Muffins

The perfect combination of blueberry and banana in an easy, moist and tasty muffin!

  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 4 bananas (mashed)
  • 2 eggs
  • 1 cup blueberries (fresh)
  1. Combine flour, baking powder, baking soda and salt in medium bowl. Set aside.

  2. Cream together vegetable oil and sugar.

  3. Blend in eggs 1 at a time.

  4. Add bananas and mix well.

  5. Blend in dry ingredients.

  6. Gently fold blueberries into batter.

  7. Fill muffin tins about 2/3 full with batter.

  8. Bake at 350 degrees for about 20-25 minutes.
